The olives are turning pink!


This past weekend I finally had some time to check on the plants on our patio.

And much to my surprise, the olives on our little olive tree are dark pink!

Since we've never had an olive tree before, I always assumed that the olives remain green until you brine them.

From what I read, as the olives ripen, their color changes from green to to light brown to bright red, then purple, and finally to deep black. Then they can be cured in brine.

Well I have no intention of curing olives in the near future, but it certainly is interesting to observe these olives changing colors as they ripen. I missed the light brown phase, which probably occurred during our move, but now there are still a couple of color changes to observe.
